From Apprentice to Project Manager: Ambre’s easyHotel Journey

At easyHotel, learn by doing is more than a phrase. It one of our People Pillars which are the core values and behaviours that guide how we work, grow, and succeed together. For Ambre, now a Project Manager, it sums up her journey from apprentice to a key member of our Operations team. 

When she joined as an apprentice in hospitality operations, Ambre wanted a role that offered real, hands-on learning. easyHotel stood out for its variety, from hotel openings and process development to procurement and contract work, giving her the chance to learn across different functions and countries. 

Since then, Ambre has helped open hotels in Marseille, Madrid and Barcelona, gaining experience in supplier coordination and operational setup. She has also supported guest-focused projects such as our Eat & Drinks Corner and breakfast offer, blending creativity with efficiency. 

Now as Project Manager, Ambre leads projects, manages suppliers and supports new hotel openings with confidence. Her journey shows what it means to learn by doing by taking initiative, embracing challenges and growing through experience.
