From Brussels to Barcelona and Valencia: Adrian Pastor-Jimenez’s Journey with easyHotel

In October 2022, Adrian Pastor-Jimenez took a leap — leaving behind the familiar rhythm of writing novels to embark on a new adventure with easyHotel Brussels. Looking for a new adventure and the opportunity to learn a new language.


Hired by Steven Fraasum (previous HM at Brussels) and warmly welcomed by the team, he quickly found himself learning on the go. “Everyone taught me something,” he says.


It wasn’t long before Adrian’s natural curiosity and drive started to shine. He asked questions, shared ideas, and stayed engaged. His initiative didn’t go unnoticed — in December 2023, just over a year after starting, he was promoted to Assistant Hotel Manager (AHM), coinciding with Manon stepping in to manage the hotel.


But while Adrian enjoyed the role and the team in Brussels, the city never quite felt like home. So when opportunities opened up in Spain, he decided to push himself to a new challenge.

“I was incredibly grateful that easyHotel believed in me,” he says. That belief led him to Barcelona La Sagrera — where he played a key role in helping open the new hotel. “It was a steep learning curve,” Adrian admits, “but incredibly rewarding. With everyone’s help, we got it done.”


Now, Adrian is turning the page on a new chapter once more: helping launch easyHotel Valencia. As always, he’s ready to learn, contribute, and keep growing.


Outside of work, Adrian finds joy in the simple things — being in nature, dancing and singing (even if modestly self-deprecating about his talent), and reading. And while writing has taken a back seat for now, he hints it may not be gone for good.


Until then, Adrian’s story is unfolding and we're excited to see him lead the new Valencia hotel opening towards the end of this year!
